WHAT BEGAN AS A POP-UP BECAME A CULINARY MOVEMENT. THREE FRIENDS, THREE DIFFERENT BACKGROUNDS, A SHARED VISION: "BACK TO THE ORIGINS." SIMPLE AND HONEST CUISINE WITH HIGH QUALITY, FAIR PRICES, AND A
VERY FAMILY-ORIENTED FEEL.

QN BAR - St. Moritz - 2017

POP-UP

IT ALL BEGAN IN 2017 WITH A BOLD CULINARY EXPERIMENT:
A POP-UP EVERY THURSDAY EVENING AT THE QN BAR. THIS IS WHERE OUR FIRST CHEF'S
TABLE WAS CREATED, FEATURING A FOUR-COURSE MENU ACCOMPANIED BY CAREFULLY
SELECTED WINES. WE PAID WHAT THE GUESTS FELT THE EVENING WAS WORTH – HONEST AND
DIRECT FEEDBACK THAT SHAPED US. THIS FIRST STAGE SERVED AS A PLAYGROUND, A
LEARNING PLATFORM, AND THE FOUNDATION FOR EVERYTHING THAT FOLLOWED.

LA SCARPETTA HAS BEEN OUR HOME IN ST. MORITZ SINCE DECEMBER 2018 – CREATED IN A FORMER SHOEMAKER'S WORKSHOP, WHICH PROVIDED NOT
ONLY THE SETTING, BUT ALSO THE NAME:

"FARE LA SCARPETTA"

IS ITALIAN FOR THE LAST BITE OF BREAD, WHICH YOU SOUPS THE SAUCE ON THE PLATE – A SIGN OF
TRUE ENJOYMENT.

THAT IS EXACTLY OUR GOAL: ANTIPASTI TO SHARE, FRESH PASTA DAILY, HONEST CUISINE – LIVELY, UNCOMPLICATED, AND GUSTOSO.

WE HAVE A PARTICULAR CONNECTION WITH PIEDMONT, WHICH ALSO SHARES OUR WINE LIST. AROUND 400 ITEMS – FROM WELL-KNOWN NAMES TO SMALL DISCOVERIES – REFLECT OUR PASSION FOR WINE WITH CHARACTER. LA SCARPETTA IS A PLACE FOR EVERYONE WHO ENJOYS EATING, DRINKING, AND ENJOYING THEMSELVES TOGETHER – AND, MOST OF ALL, A PIECE OF BREAD.

IN SPRING 2019, OUR FAMILY GREW: GIARDIN IN PONTRESINA OPENED – A MEETING PLACE, WITH APERITIVO CULTURE, CRISPY PIZZA FROM THE WOOD-FIRED OVEN, AND SPACE FOR ALL GENERATIONS. CHILDREN FIND THEIR PLAYGROUND HERE AMONG FLOWERS AND HERBS, WHILE ADULTS ENJOY THE VIEW OF THE BERNINA MASSIF AND A GOOD GLASS OF WINE. A RESTAURANT THAT CONSCIOUSLY CELEBRATES TOGETHERNESS
– ALPINE, DOWN-TO-EARTH, LIVELY.

SCARPETTA 2.0 - ST. Moritz - 2019

POP-UP AT FAORO

IN DECEMBER 2019, WE RETURNED TO THE POP-UP CONCEPT – THIS TIME BIGGER, LOUDER, BOLDER. SCARPETTA 2.0 MOVED INTO FAORO AND EXPANDED THE TRIED-AND-TESTED CONCEPT WITH SELECTED MAIN COURSES. THE HEART REMAINED THE
SAME: ANTIPASTI, PASTA, GOOD WINES, AND GOOD CONVERSATION. BUT THE STAGE WAS BIGGER – AND THE GUESTS MORE NUMEROUS.

TARTUFO & BAROLO - Zurich - 2020

CHAMBRE SÉPARÉE IM HOTEL AMBASSADOR

IN THE WINTER OF 2020, WE TRANSFORMED AN ENTIRE FLOOR OF THE OLD HOTEL AMBASSADOR IN ZURICH INTO A PLEASURE LABORATORY SHORTLY BEFORE ITS DEMOLITION: OUR CONTRIBUTION TO A HOUSE FULL OF GASTRONOMIC IDEAS WAS CALLED TARTUFO & BAROLO. HERE, WE SERVED A SEVEN-COURSE TRUFFLE MENU
ACCOMPANIED BY BAROLO FROM PIEDMONT. A SENSUAL INTERLUDE, INTENSE, FLEETING—AND
MEMORABLE.

RESTAURANT

LA SCARPETTA ZURICH A HOUSE WITH HISTORY: MORE THAN 200 YEARS OLD, ONCE A GUNMAKER'S WORKSHOP, LATER THE WELL-KNOWN CHÄSSTUBE
REHALP – AND SOON OUR NEW LOCATION IN ZURICH. WE BECAME AWARE OF THE PROJECT THROUGH A LONG-TIME FRIEND – A WINEGROWER FROM ZURICH, A LOVER OF GOOD FOOD AND WINE LIKE US. HIS ENTHUSIASM FOR THIS SPECIAL PLACE WAS CONTAGIOUS – TODAY, AS
CO-OWNER, HE IS PART OF THIS NEW STAGE.

IN SUMMER 2025, WE WILL OPEN OUR SECOND SCARPETTA RESTAURANT HERE – FEATURING WHAT DEFINES US: SHARE-STYLE ANTIPASTO, FRESHLY
PREPARED PASTA THAT CHANGES DAILY, AND A SMALL SELECTION OF SECOND COURSES – ITALIAN, VIBRANT, AND CASUAL.

A REAL HIGHLIGHT IS THE VAULTED CELLAR DATING FROM 1812 – ONCE A FREESTANDING WINE CELLAR, NOW A SPACE FOR TASTINGS, EVENTS, AND
SOCIAL GATHERINGS. A PLACE WHERE THE PAST, PRESENT, AND FUTURE TOAST TOGETHER.
